Coconut Bliss Balls

I recently made these scrumptious treats for a friend’s birthday, and they didn’t last long. They are high in protein, high in fibre, low carb, gluten free and sugar free – perfect paleo sweets.

INGREDIENTS
1 cup raw cashews
1.25 cups shredded coconut
1/3 cup melted coconut oil
1 teaspoon vanilla essence
2 teaspoons stevia powder

METHOD
Place 1/4 cup coconut in the food processor and grind to dessicated texture – put aside in a small bowl.
Put cashews in the food processor and grind to a coarse crumb.
Add 1 cup shredded coconut and grind to a fine crumb.
Add melted coconut oil, vanilla essence and stevia powder. Process until mixed through.
Roll mixture into 3cm ball ad roll in coconut that’s been set aside.
Refrigerate for 2 hours minimum.

Makes 10 – 12 balls
